🌍 Where Are We This Time?

Las Vegas, Nevada, is synonymous with entertainment — a dazzling playground in the desert that’s less than a century old. This desert city is home to both opulent fine dining on the Strip and hidden local gems. It welcomes millions of visitors each year with flair and flavor. Phil explores both sides — the flash and the heart — and discovers that behind the showmanship is a real sense of culinary passion.

🍽️ What Phil Ate

In true Vegas fashion, Phil goes big — and sometimes unexpectedly homey — with what he eats:

  • Short rib Barbacoa – Slow-cooked beef short ribs served with homemade tortillas and vibrant garnishes.
    📍 Where: Milpa
  • Cauliflower alla Romana – Roasted cauliflower with golden raisins and pine nuts, inspired by Roman artichokes alla giudia.
    📍 Where: Esther’s Kitchen
  • Hand-pulled noodles – Thick, chewy noodles tossed with savory chili oil and sliced beef.
📍 Where: Big Dan Shanxi Taste

📍 Phil’s Stops

💬 Final Thoughts

My earlier visits to Las Vegas were filled with casinos, hotel buffets, and dinners at celebrity chef restaurants. I strolled the Strip with flashy frozen drinks, watched fountain shows, and used it as a stop on the way to the Grand Canyon. But once again, Phil took a very different journey.

In this man-made desert city, he started with a Southern-style breakfast. His journey continued through Europe and Asia in spirit, then circled back to American classics — a food experience as diverse as Las Vegas itself. More importantly, he didn’t forget to highlight the stories of the people who make this artificial city come alive.

Las Vegas may have been built on the barren grounds of Nevada as a stage for dreams, but it has also become a magnet for people chasing their own. In less than a hundred years, it has grown into one of America’s flashiest icons.

When I recently told friends I was planning another trip there, some warned me that Vegas isn’t the fun place we once knew. But thanks to this episode, I’ve discovered it still hides plenty of surprises and joy beneath the neon.

Las Vegas, I’m ready to rediscover the fun — are you?
